この本は、『仕事論』というよりは、『人生論』だと思う。
彼は『料理人』で、私はどこにでもいる『サラリーマン』なのだが、
そんな職業的枠組みは簡単に飛び越えてしまっている。
どんな職業であれ、共通する核は必ずあるんだろうと思える。

社会人になって、毎日が迷子みたいで心もとなかったり、
全然うまくいかなくて、通用しなくて、悔しかったり。
それでも熱中するからこその面白さを感じたり。
そういう時にこの本を読むと、本当に何かをやり切って成功した、
力強い先人の言葉が、強く染みいるのです。それで、ちょっと、涙ぐんでしまう。お勧め！！
★私の購入ポイント★
１）実体験からしか語らない、魂の入った『人生論』だと思ったから。
２）ネットで、パイロット版のようなＨＰを読んで面白過ぎると思って
　　いたから。

「海外で料理修行をしたシェフ」はたくさんいるでしょうが、ここまで過酷な経験をした人はあまりいないのではないでしょうか。フランス語がほとんど話せず渡仏し、朝早くから深夜まで、馬車馬のように働き、その中で著者は何かを掴んだわけです。

それは料理のスキルではなく、「人生をどのように生きるか」と言う人生訓であり、これが料理人以外の人生に於いても通用してしまう普遍的なモノなのだ、と言う事が本書を読み進めると分かってきます。

人間の限界レベルまで努力した人というのは、どの世界の人でも同じ境地に達するのだ、と言うことを再確認する事が出来ます。

私は、ひょんなきっかけから外食産業で働くことになり（経営の立場です）、現在はいろいろな本を読んで勉強をしているところです。その中の一冊としてこの本を読みました。

この本で面白いと思ったのは、フランスのレストランにいろいろなやり方のところがあること。特に斉須さんが最初に勤めたカンカングローニュとヴィヴァロアの対比が面白いです。ここまで違うレストランの経営哲学があるのかと私の仕事にも参考になりました。

斉須さんの生き方というか人生哲学にも学ぶところは多いですが、この本は始めから終りまでそれを語り続けていて、最後の頃にはちょっと息苦しくなってきます。どんな仕事でも一流になろうとすれば苦労をするのは当たり前で、それを俺はこんなに苦労をしてきたんだ、というのは聞かされる方からすれば、そんなことどうでもいいじゃないですか、料理人なんだから結果としての今の料理がおいしければ、と思ってしまいます。

この本と同時に村上 信夫さんの「帝国ホテル厨房物語―私の履歴書」 (日経ビジネス人文庫)を読んだのですが、同じ超一流のフランス料理の調理人でフランスで苦労をした話が語られています。ただ、村上さんの場合は、全てがポジティブでどんなに辛いことでも自分の糧としようとしている。シベリア抑留中なんて辛いことしかないはずなのにためになったと書いている。
やはりそれに比べると斉須さんの生き方は悲壮感と緊張感が強すぎるなと感じます。
読み比べてみるとまた新たな発見があるかも知れません。

斉須さんは食事をしたお客様から「とても美味しかったです」と言われても、「そのために作っているのだから当たり前だろう」、という態度を取られるという話を聞きました。まさしく職人なんでしょうね。
でも私としては、それはちょっと窮屈な、緊張を強いられる料理は食べたくないなと思いました。

それにしても、いろいろ考えさせられるところがある本ではありました。
外食産業で働く人は一度は読んでおく価値はあると思います。
