開高 健
1930年、大阪市生まれ。大阪市立大卒。’58年、「裸の王様」で芥川賞を受賞して以来、次々に話題作を発表。ベトナム戦争のさなか、しばしば戦場に赴いた経験は、『輝ける闇』(毎日出版文化賞受賞)、『夏の闇』などに凝縮され、高い評価を受けた。’79年、『玉、砕ける』で川端康成文学賞、’81年、一連のルポルタージュ文学により菊池寛賞、’87年、自伝的長編『耳の物語』で日本文学大賞を受けるなど、受賞多数。’89年、逝去(本データはこの書籍が刊行された当時に掲載されていたものです)

開高健の傑作はたくさんあります。
人によってそのベストワンはまちまちでしょうが、私のイチオシはコレ。
最初の１ページ目から最後のページまで、知的好奇心を刺激されっぱなし。
開高健のゆたかな語彙と、独特の日本語のいいまわしにひきつけられて、寝る間も惜しんで読んだことが昨日のようです。
本の最後の方、残りページが少なくなってくると「ああ、まだ終わらないで…」と願った唯一の本でもあります。

もともとは月刊「諸君！」に連載されていたものをまとめたもの。
しかし、並々ならぬ労作です。
古今東西、「食」（酒も含む）を軸に、開高氏がさまざまなテーマに体当たり。
対象への斬りこみが深く複眼的です。
ああ、こういう見方もあったのか…、と私のような浅い人間は嘆息の連続です。
ところどころ、頬がゆるむクスッとなるようなあたたかいユーモアがあって、読み飽きしません。

数年前、当時の在庫をすべて買い取り、知人友人先輩後輩に送りつけ無理やり読ませたことがあります。
みなさんもぜひ！　

ちなみに初版本の装丁は見事でした。
あれを超える装丁を、日本の本では見たことがありません。

作家の豪放磊落のマスクの影の、作家本人の言葉によれば、「滅形」という闇は、こんな食物をめぐるエッセイにさえ見え隠れしている。ラブレー風の饒舌で豊穣な、水気の多い文章にも、作家の憂鬱が覗かれる。カニバリスムをして飽食に厭いた末の高度の食文化として「最後の晩餐」となずける作家の、その精神の闇の深さを知るべきか。中野美代子氏も、このカニバリスムの部分について絶賛している。肉体にたいする独特の見方をもつ文明からよって来る中国のカニバリスムについて、更なる興味をお持ちの向きは、大室幹雄『桃源の夢想』が参考になろう。

久し振りに読んでみて、やはり開高健はすばらしいと思った。
何よりもその文体である。
豊饒という言葉がぴったりだ。
豪華絢爛な文章というか。
なおかつ軽妙である。
そしてそれを支えているのが該博な知識である。
知らず知らずのうちに開高世界へ引っ張り込まれる。

これは昭和５２年から５４年まで、雑誌「諸君！」
に連載されたものをまとめたものだ。
古今東西の様々な食に関することを書いているが、
話は例によって歴史や文学や政治におよぶ。
そしてまたこの脱線がおもしろい。
没後20年になると知ると驚く。
もうそんなになるのか。
しかしいっこうに古さを感じさせない。

「人の一生の本質は二十五歳までの経験と思考が決定する」
というような恐ろしいことをずばっと書くし、
中国と日本の精進料理の比較をしたあと
「中国人と日本人とでは僧の現世に対する執着そのものが相違するのであろう。」
と鋭く解剖する。
あらゆるところに宝石のような片言隻句が散りばめられていて、
読むたびに発見がある。
食の世界の広さと、それにまつわる文学や歴史の話を読んでいると、
世界は広い、まだまだ自分の知らない世界があり、
それを知る楽しみがあることを教えてくれる。
