フランス革命期を生きた司法官が記した美味学の古典。
ラム酒を含ませたスイーツ「サヴァラン」や，フレッシュチーズの「ブリアサヴァラン」は，この著者名にちなむもの。

冒頭のアフォリスムは，どこかで接したことがある方も多いはず。
「どんなものを食べているか言ってみたまえ。君がどんな人間であるかを言いあててみせよう。」などなど。

法律家の蘊蓄話が詰まった上下２巻を通読するのは骨が折れるかも知れませんが，そういう方には，『ブリアサヴァラン「美味礼讃」を読む』（辻静雄・岩波セミナーブックス）をどうぞ（訳者に原書を貸したよしみだとか）。

訳者・関根教授の初訳は白水社から『美味礼賛』として現在も出ていますが，岩波文庫に入る際に，娘の戸部氏が改訳に協力したとのこと。
なぜタイトルが「礼賛」から「礼讃」に変わったのか，ご存じの方は教えて下さい。
訳注に辻静雄の著書が引用されており，これを対照させて読むのも一興です。

　生きるために欠かせないもののひとつ。それは食べ物。この"食べる"ということに無常の楽しみを見出す人々が、本書の言う、グルマンディーズである。
　生物の歴史の中で、こういった存在が現れたのは一つの奇跡だと思う。本来はそれが自分にとって危険であるか否かを識別するものであった道具としての味覚を、それを楽しませるための手段を追求するというのだから。生きるためには無駄なことにエネルギーを注げるだけの段階に、人間が到達したということなのだろう。上巻では、サヴァランの味覚理論とグルマン礼賛にほとんどのページが割かれている。
　本文中からは軽い印象を受けるサヴァランだが、解説によれば、波乱万丈の人生を送っているらしい。そういった長い流転生活が、彼に祖国の料理に対する畏敬の念を生じさせ、グルマン礼賛へとつながって行ったのだと思う。
　彼の理論はほとんど彼の経験にのみ依存しているため、その科学的正当性にはかなり疑問が持たれるが、当時の時代背景を探るには格好の作品だと思う。

この本は時代背景等を考慮して読み進むと大変興味深い。当時の上流階級がどんな物を食べ、どんな家に住み、友人を招いたり返礼したり・・・となかなか想像力を掻き立てられる。しかしその想像を困難にしているのは、日本語訳である点は否めない。
フランス語の翻訳であるが、中学校の英文翻訳のようにたどたどしく、日常の日本語表現と著しく乖離している。それは出版の古さだけが原因ではないと思う。多くの読者を満足させるためには、この日本語訳を更に日常表現の日本語へ「翻訳」する必要があるのではないか。
