発芽玄米を加えて作った市場初のテンペ。発芽玄米と大豆をテンペにした、栄養価の高いテンペです。テンペ菌で発酵させることにより、消化吸収が良くなり、もちもちした食感も楽しめます。ご飯とおかずがひとつに融合した理想的な食品です。テンペとはマクロビオティック食のレシピで良く利用される代表的な食材です。インドネシア発祥の醗酵食品で、煮た大豆をハイビスカスの葉に付着しているテンペ菌(リゾプス菌)で醗酵させた伝統食です。見た目はまるで綿毛でくるまれたケーキのようです。 醗酵することで、大豆のほんのりとした甘さが引き出されています。納豆のような強いにおいや粘りがないので、薄くスライスして肉の替わりに用いるなど、さまざまな料理に使うことができます。最近では、大豆でできていることから体にやさしい食品として大きな注目を集めており、マクロビオティックの食事にもよく使われている食品です。
