いままでの調理法とちがい発酵に時間をとられることなく、簡単にパンを焼くことができました。これなら毎日でもおっくうにならず焼けそう。バリエーションもたくさんあり、保存版になる一冊です。

本の中身は写真が多く見た感じも美しく手順も丁寧に詳しく書かれているため、
解りやすい内容です。
ただし、基本の食パンを１０回以上作りましたが、おいしいパンにはなりませんでした。
分量も正確に手順も忠実に行いましたがダメです。
ダメというのは、市販品レベルとまではいかなくてもホームベーカリーで作ったパンと比べても
出来上がりはその半分以下のレベルで、とても満足できません。
このレシピでパンを作り続けている人は一体どれ程いらっしゃるのでしょうか？
多分、一度作り「こんなものか」と解ってしまうと、あとは終わりになると思います。
簡単！といってますが、生地を捏ねる作業が無いことと発酵時間が短いことだけです。

おいくならない理由として以下の２つが考えられます。

Ａ．ドライイーストの使いすぎ
　（分量が通常の2倍以上に設定されています）

Ｂ．「生地作りの際に粉は箸で１０回以上混ぜない」作業工程

Ａについては、やはり出来上がりはイースト臭くなります。（イースト２種類で試しましたが一緒でした。）
Ｂについては、この本の核心に当る所ですが、やはりこのやり方ではふくらみが悪いです。
著者は、「混ぜないことが膨らむ秘訣である」と言っていますが、通常の７割り程度までしか
ふくらまないので、ふっくら焼き上がりません。さめるとカチカチに硬くなります。

以上より、この本のレシピに従いパンを作ることのメリットは何なのか？
残念ながら私にはその意味すら見出せませんでした。
