店でおいしいイタメシを食べたんだけど、どうやって作るんだろう？難しいんじゃないんだろうか？
そんな悩みをかかえている人は意外と多いと思う。
その悩みはこの本を読むことで一気に解決する。
だいたいの料理本は、レシピを渋るか、解説を渋るかのどちらかなのだが、この本にはそんな心配は全く無用だ。
出し惜しみなしのレシピと懇切丁寧な解説によって、イタメシが得意になることは間違いない。
しかも、前菜からデザートにいたるまで、イタリアンの代表的料理はおおむね網羅されている。
落合氏の本はたくさんあるが、この本が最もまとまっているのでいちばんよい。
イタメシを料理のレパートリーに加えたい人は、この本を手に入れてレシピ通り作れるよう練習するのが最短距離だ。
また、この本は、マガジンハウス既刊ムック「ちゃんと作れるイタリアン」の改訂版にあたる。
改訂の内容は大きく２つ。
デザートに、パンナコッタ、グラニータ（シャーベット）などが追加されたこと。
ラ・ベットラの支店紹介が追加されたこと。
大きく改訂と謳っているが、他のページは前の本と変わりはない。
前著を持っている人は特に買い換える必要はないかもしれない。
但し、デザート好きの人はやはり改訂版も買いたくなる魅力があると思う。

なぜその作業が必要なのか、調味料を入れるタイミングの理由、
調理がうまくいく、あるいは失敗するポイントなど
工程ごとの写真の横に、それぞれ詳しくコメントされています。
まるで料理教室に参加しているみたいです。
これまで何冊もの料理本を手に取りましたが、
ここまで親切な料理本は少ないように思います。

落合さんの人柄がよく出ている一冊。
他のレシピ本の行間にある、「本当に知りたいこと」がきちんと書かれていて、まるで直接アドバイスをもらっている感覚。
他の方のレビューにもありますが、“料理教室”で行程ごとのポイントを解説してもらっているような感じの本です。
実際、難しい作業はほとんど無く、レシピにある「コツ」をきちんと守れば簡単に美味しいメニューができます。
非常に親切な料理本です。
