レストランシェフが教える下ごしらえから、産地の野菜作りのこだわりまで、野菜を丸ごともっと使えるようになる本です。
添え物やいつものメニューだけでない、立派な一品になるレシピも載っています。
台所において、ふきのとうのあく抜きは？とか、ふろふき大根のコツを確かめながら作りました。
