食品の栄養価をまとめた「栄養辞典」。旧科学技術庁、現文部科学省の資源調査会編「五訂日本食品標準成分表」(「五訂」とよく略される)などを元に、栄養や健康に関する諸表をはじめとした各種情報をまとめて一冊にしたものである。

カラーページには水産物・農産物の出回り時期や代表的な食品の具体的写真が掲載されている。また、ページの大部分を占める「五訂」の表の後には、「栄養所要量に関する諸表」「日本人の栄養摂取状況に関する諸表」「学校給食に関する諸表」など、食品の栄養価が気になる人や健康の造詣を深めたい人にはうってつけの表や情報が盛りだくさん。

「五訂」を元にしたデータ本や参考書は数多くあるが、この「五訂食品成分表」は「まずは何よりこれ」という位置づけの一冊である。
