　健康に気を遣って、酒食を制限したわけではないが、過酷な労働条件の中で、「食が細ってしまった」。かつて、昼食で「カツどん大盛り」を頼めたのに、いまや、「盛りそば一杯」になってる。幸い、長家は、噛まないで済むし、ビール以外はお腹にたまらないので、昔どおりだが。
　しかし、著者の健啖振りには本当にあこがれる。
　フォアグラ、キャビア（後はトリュフ？）に舌つつみを打ちながら、いわゆる「ゲテモノ」もかまわず食べられる。
　人間、酒を飲み、物を食べてる時には、カニを別として饒舌になるものだ。著者は、高級からゲテモノまでを全て受け入れる頑強な胃腸を持ち、そこから、歴史や文化や文学を語りつくす。こんな幸せな人生はないだろう。

　開高健が食をテーマに書いたエッセイを、いろいろなところから寄せ集めてきたもの。『食後の花束』『小説家のメニュー』などが使われているようだ。
　テーマは３つ。戦時下の貧しい食生活、酒、珍味奇食である。いずれも開高健の本質をついた切り口であり、また文章も精選されており、素晴らしい。
　開高健の「食」について、一冊で知りたいと思ったら、これ以上の本はないだろう。また、すれっからしのファンでも、それなりに楽しめる内容に仕上がっている。
　しかし、個人的には、こうした切り張りでつくった本というのは、許せない気がする。
