北大路魯山人がコンブだしのとり方から東京のすし屋まで語った料理語録。彼は料理とは理（ことわり）を料（はかる）ることといい、合理的でなければならない、ものの道理に合わないことではいけない、と言い切っている。周りに対して厳しい人だったんだろうな。料理を芸術まで高めるにはコレぐらいしなければならなかったんでろうな。
色々な部分で同感できないところもありますが、料理に「命」をかけた男の考えの一端を窺い知る事が出来ます。

　1998年にランティエ叢書（文庫）として出たものの新装版。
　内容は変わっていない。
　魯山人が1930-50年代に書いた16篇のエッセイがまとめられている。もともと『星岡』に掲載されたものがほとんどで、魯山人の食へのこだわりがストレートに表現されている。
　茶漬けについての話が面白かった。塩昆布、鮪、ハモ、穴子などの茶漬けが取り上げられ、その味わい、食べ方、ポイントが指摘される。
　とても頑固そうで偉そうなところは、いかにも魯山人の文章だ。好き嫌いが別れるところだろう。
　160ページ弱と薄い本であり、いささか物足りない思いが残った。

　この本は、「グルメ文庫」と題されている。他のレビューでも書いたが、私は、「グルメ」という言葉に嫌悪感を持っている。自分で「グルメ」という人間は、金にあかした似非「食通」という印象があるからだ。金にあかさないまでも、容易に手に入らないものを社会的、もしくは文化的地位に基づいて手に入れて、「めったに食えないものを食べました」では、納得いかない。
　北大路 魯山人の地位からすると、ひょっとしたら、そういう似非「食通」になるかと思ったが、よかった。
　確かに「鱧の茶漬け」の話は、普通の人間には、食べる機会はかなり少ないが、「鱧」自体は、食べることは出来る。
　こうした、ちょっとしたさりげない話がつながるが、それがいいですね。
　少なくとも、「通」ぶらないのがいい。
