安川 哲二
1948年福岡県生まれ。1965年に中村調理製菓専門学校卒業。1965年、料理の世界に入る。東京「四川飯店」で修業、日本における四川料理の祖といわれる、陳建民氏、中国料理の鬼才といわれた岡野國勝氏に師事する。「唐人飯店」「香港飯店」「味の一番」等で料理長を務める。1977年、東京・原宿に「龍の子」を開店。本格的な正宗・四川料理を基本としながら独創的な料理の世界を展開している。服部栄養専門学校、辻調理師専門学校、武蔵野調理師専門学校、海外調理師専門学校、中村調理師専門学校などで指導する。TV出演、掲載誌多数(本データはこの書籍が刊行された当時に掲載されていたものです)
