3.0 out of 5 stars あまり役に立ちませんでした。, 2004/12/20
~良く行った懐かしいお店などが出ていて、ワクワクしながら眺めたのですが、材料名は表示されているものの、肝心の配合比がない（当たり前なのかもしれませんが）残念です。（味噌だれは配合比がありましたが、、）業務用本なので自分で研究、挑戦といったところなのかもしれません。
練り物の作り方（技法）、たねの調理法等ありますので、研究熱心な方には~~役に立つかと思います。味付け（配合）は、あくまでも自力でなので、それでも構わない方には、良い本かもしれません。~
