お店の代表的なラーメン１種類をピックアップして、
材料の種類と数量・工程を約２ページを使って紹介している。
各工程が写真付きでとても分かりやすい。

ただ本の９割がこの各店のラーメン製作の紹介。
それを良いと思えるのは中級者以上。
「○○Ｌ寸胴に豚骨○○Ｋｇ・・・」
なんて内容が９割だと初心者にはきつい。

不満は

・初めのページがローカルのラーメン情報雑誌のような感じ。
・業務用スープ・フランチャイズ紹介など本筋とは違うものも掲載。
・資料が若干古いかな？気のせいかな？

中級者以上向け。
