1966年福岡県生れ。高校3年からアメリカに留学し、カリフォルニア大学バークレー校を卒業。留学中、大家族のホストファミリーのために食事を作っているうちに、料理への関心を強める。帰国後、広告代理店「電通」に就職。コマーシャルのプロデューサーとして活躍中。語学力を買われての海外出張が多く、いろいろな国でおいしいものに出会うのが楽しみ。家族は夫と2歳の娘と生まれたばかりの娘の4人暮らし。仕事と子育てに忙しくも楽しい日々を送っている(本データはこの書籍が刊行された当時に掲載されていたものです)

行正さんが好きなのでほとんど本を持っているのですが今回のは今までの本に掲載された和食シリーズの寄せ集めといったところで新鮮味がなく残念でした。

初めて買う人にはいいのかもしれません。

行正り香さんの料理本が好きなので今回もつい購入しましたが、煮物、煮魚、卵、豆腐、酢の物、ごはんのそれぞれに味付けの配合ルールが記されていてそのルールに基づいた和のお惣菜（そして少々タイ風などのエスニック）の展開レシピの形で紹介されています。レシピ数も多いし、ルールも一度読み込んで覚えてしまえばおかずの幅がぐんと広がりそうなのですがルールが多すぎてちょっととっつきにくさを感じるのとレシピ数が多いのはいいですがレシピがダラダラと書かれていて見づらいのが難点です。また行正さんのエッセイが少ないので今までの本のようなものを期待するとちょっとがっかりです。でも手元にあるといざ和食！というときのお助け本にはなるかもしれません。

この料理本は初心者にお勧めします。
和食バッチリルール表なるものが掲載されていて、
だしと調味料の調合割合とあう料理名が表になっています。
レシピもカンタンだし、いつも食べたいメニューが揃っています。
「味が決まらない!!」「なに作ろう」と悩む料理初心者にはありがたいですね。

が、しかし、少し料理はうまくなると、
「今日の魚は脂が乗っているから出汁は薄く」
「酢の物が食べたいから、もう一品は薄味」
「このレシピは濃い目がおいしい」
などなど、食材良否やメニューの取り合わせ、好みで調理を変えるようになります。その域に達するまでの、踏み台本でしょうか？

しかし、この人、相変わらず味の素がお好きのようです。
しっかりだしをとっているんだから、あえてグルタミン酸などふりかける必要はないと思いますが。この点は理解不能ですが、この手軽さが初心者向けかも??
