この本を読めば、東京農大の小泉武夫先生の講義を学ぶことができます。
ブックカバー挿絵の左側は、原始時代にさかのぼった小泉先生の似顔絵ではないかと思います。
難しいお話は抜きにして、気軽にな感じで、原始時代からの食のルーツをたどっていきます。

歴史をたどるには、考古学や民俗学などがありますが、これは衣食住の中で最も大切である「食」を中心としてヒトの文化が発展したきたという論法で書かれています。そういう意味で、歴史をたどる中では、画期的な考え方であるとも思われます。

ヒトは何を食べてきたのか、なぜそのような食の習慣が生まれたのか等ということを民族ごとに考え、食のルーツや歴史を知っていくうちに、現在の食のあり方、21世紀に向けた提言をしています。
小泉先生のご専門分野である発酵のお話や発酵にまつわるお酒のお話しなども盛りだくさんで、ざっくばらんな読み物です。

塩はどうして殺菌効果があるのでしょうか？
乳酸発酵するとどうして腐らなくなるのでしょうか？
酒はそもそも人類がどうやって作るようになったのでしょうか？
どの民族も一日三回食事をするのでしょうか？

どれも素朴な疑問ですが、この本を読むまでは正しく答えられないことばかりでした。
特に「どうして塩に殺菌効果があるのか？」こんな単純なことに答えられない自分に気が付いて愕然としてしまいした。

単なる蘊蓄だけにとどまらず、体系的にかつ分かりやすく「食文化」を学ぶことができます。
そして、「オモシロ食べもの話」も満載です！

　1997年に時事通信社から出版された『「味覚人」飛行物体　食の世界を行く』を文庫化したもの。
　東京農業大学で小泉氏の担当している講義「食文化論」の内容をまとめたものであり、初心者向けのきちんとした内容・構成となっている。人類の食の歴史と、民族と食文化の問題が系統的に説明されており、入門書として貴重だろう。

　食べ物の好き嫌い、マナーの存在する意味など、普段何気なく見過ごしていることも、小泉氏の手にかかると、たちまち歴史的・文化的にすぱっと説明されてしまう。人間が食べられるもの、食べられないものを生理学的に解説してくれている点もわかりやすい。

　小泉氏が色々な著書で取り上げている体験やさまざまな食物がジグソーパズルのように、あるべき場所に填め込まれていくような一冊であった。
