　1953年に生まれ、文化大革命下に青春を送り、日本に留学した、料理好きな日中比較文化史研究者が、1997年に刊行した本。「中華料理」は「四千年前」から変わらず存在してきたものではないし、一枚岩のものでもない。今日の中華料理の定番が現れ始めたのは宋代以降である。紀元前には粒食、煮る・焼く、手づかみが中心であり、漢代に粉食（麺）・外食業が登場し、六朝〜唐代には遊牧民族の影響を受けつつ、徐々にパン食と香辛料が普及し、犬食が忌避される。宋代には箸が縦に置かれるようになり、羊肉の地位が向上し、炒め料理が普及したが、料理は概して淡白であった。続く明清期に、珍味（フカヒレ等）や唐辛子が普及し、この時期に今日の「中華料理」が確立する。しかしその後も中華料理は変化し続け、経済開放後は香港料理の北進が見られる。以上が本書の粗筋である。本書では、「食文化に大きな変化が起きた時代に注目し、変化の背後に何があったかを究明するのが目的」であるとされ、それゆえに個別の素材・調理法・マナー等に即して、地域差・階層差・時代差の問題が論じられているのが特徴である。また、中華料理がさまざまな異民族との平和的・戦闘的な交流の中で形成されてきた雑種料理であり、常に変化しつつあるものであるという著者の立場は、安易な日中文化の図式的比較とは一線を画し、非常に説得的である。煩雑な内容をここまですっきりまとめているのには敬意を表したい。各章はある程度独立しており、また料理自体に関心のある人向けにも書かれている。読みやすく有益。

中国では古代から現代まで王朝が変転し、また周辺異民族による侵入、支配が繰り返されてきましたが、そういった長い歴史のなかの歴史的分岐点において漢民族の食文化が劇的に変化してきた事実が詳らかにされています。

孔子の時代、めしを箸を使わずに手掴みで食していたとか、古代より犬は漢民族の重要な蛋白源であったのに、犬食を忌避する度重なる遊牧民族の支配によりゲテモノ料理になりさがり、あんなにバラエティー豊かな食材をフル活用する中国の料理人も、ワン公だけはめったなことでもなければ料理しない、同じく遊牧民族の影響で、現代では主流である豚肉よりも羊肉がもてはやされた時代があったこと、海産物を嫌うモンゴル族、女真族の影響でツバメの巣が超高級料理になるには近代を待たなければならなかったなど、本場の中華料理のうんちくが盛りだくさんです。

フカヒレに関する記述は必見。著者はフカヒレは姿煮に限る、フカヒレスープを出されて喜んでいるお客さんは、店の人に騙されているのだということを暴露しています。これは読んでからのお楽しみ…(笑)。

春秋戦国時代~清朝~そして現代までの中国の料理の歴史が
一望できます。
我々がよく知っている中華料理というものは、4000年の歴史があるのか？
という疑問に本書は答えてくれることでしょう。
中国の料理は各時代で大きく変化してきた。
その変化の上で、現在の麻婆豆腐や北京ダックなどの料理が出現してくるのだ。

中国の歴史小説を読むにあたっても、本書は想像力を喚起してくれると思う。
三国志の武将たちと、春秋戦国の英雄たちが食べていたものが
少し違うのだということに気付けば、面白さが倍増するかもしれない。
