ニューヨークやパリで回転すしが大流行しているという実態を、わかりやすく、そしてスピード感あふれる文章でつづっている。 パリのある高級回転すし屋は、夜の部は予約制になっていて、それでもなかなか予約が取れないという人気ぶりだという。それにこの本、すしにまつわる話題も非常に豊富だ。回転すしの流行に伴い、フランス人の食事の習慣も変わってきたそうである。今までは決して相席しなかったはずが、赤の他人と向かい合って食べても平気になったり、食事といえばコース料理に決まっていると考えるフランス人が回転するコンベアの前で困惑する姿など、読んでいて楽しい。 世界のすしのカラー写真もたいへん美しく、「こんなすしもあったのか」と新たな発見もいくつもあった。 それにしても、好奇心と食欲、両方そそられる本である。

我々の日常でも一般的になってきた回転寿司。
実は９０年代後半から世界でも寿司が拡散していき、
回転寿司やスーパーのお総菜にもの浸透しているという。
この噂を聞いた筆者はいてもいられなくなり、
回転寿司の旅に出かける。パリ、ロンドン、
アムステルダム、ニューヨーク、ロサンゼルス、
とうとう世界一周してまで寿司を見て回った見聞録。

この本は1999-2000年に筆者が回転寿司を取材に
外国へ行き、現地で見たものを日記風にまとめた
エッセイである。この本で気づいたこと。
まず一つ目、寿司は外国人が食べてもおいしいと感じ、
回転寿司は何処の国でもおもしろいシステムらしい。
二つ目、寿司は現地でスシ(Sushi)となって
それぞれの文化にとけ込んだスシに変容しているが
それぞれの国に文化の違いが見られて非常に
おもしろい。この取材の後も回転スシは色々な国に
出現しているそうである。日本人として身近な食材が
外国に受け入れられていくことは光栄である。

初期の著作の「料理の四面体」に見られるような切れ味の鋭い論理性、文化人類学的考察があまりない。だから「そうだ！！なんと玉村豊男は頭がいいんだろう。なんで、このような考察が出きるのだろう」と思わず、ひざを打つ。というわけにはいかない。ミツカン酢も発売している宝酒造のお金で取材したからでもあるまいが「すし」に対する過度の「思い入れの開示」が少しムリっぽい。しかし上出来のルポではある。
