料理の鉄人でおなじみの香港グルメ大王チャイランさんの日本語で書かれた（多分）２冊目の香港グルメガイドブック。 前作「香港美食大神」がマニアックな読み物ふうだったのに対し、今作はカタログふうで使いやすく香港ビギナー向け。

比較的リーズナブルな人気店海都海鮮酒家（私も２回行きました）が、香港を代表する最高級店福臨門と並んでトップの得点を与えられているあたり、味にうるさいチャイランさんならではではないでしょうか。

この本は1999年に出版された『食在香港』−亜州美食系列之一（星駿出版有限公司）の、一部に日本語訳です。『食在香港』では、価格・質素・服務・雰囲気・チップ・カードの状況を＄や花のマークで表してあるので、レストランを選ぶときに参考にしていました。それが日本語訳になったので、香港で何か変わったものが食べたい場合、ぜひ一緒に旅のお供にしてあげて下さい。何より持ち歩きに便利なサイズっていうのが良いですネ。初心者の方にも簡単にレストラン選びができるようになりました。広東・北京・上海・四川等料理別に紹介されているので便利です。有名なレストランに入っても何を注文して良いか分からない場合（最初の頃は、何を頼んで良いか分からなくて揚州炒飯とか頼んでしまいますよネ）この本の”おすすめメニュー”を指差すのも一つの方法です。香港でしか、香港のその店でしか食べられない貴重な体験ができる筈です。
ひとつ欠点を挙げれば、蔡瀾の食の好みと、一般的な日本人の食の感じ方が違うことではないでしょうか？例えば、粥・麺で有名な『羅富記』での紹介で魚の揚げ団子は、ハマグリを漬け込んだタレをつけて食べる珍味とありますが、かなり慣れない味なので、やみつきになるまで何回香港に行かなければならないかと･･･

「かつては役に立った」と書かなくてはならないのが残念。筆者の食いしん坊ぶり、情報の的確さ、筆力に感心はするが、なんせ香港のレストランの「美食事情」の変遷は激しい。すでにないレストラン、現在では味の低下が激しいレストランも載っているので、このガイドブックを片手に食い歩きをすると裏切られる事も多いだろう。しかし、それは筆者の責任ではない。ここは一つ、改訂版を出して欲しい。改訂版であれば、星５つまちがいない。（松本敏之）
