　ほぼ、ラーメンに関する初歩一般知識である。しかも裏づけデータがなく、客観性にもとぼしい。一般人をターゲットにするなら、もっとラーメンに関するオモシロネタを集めるべきだった。
　しかし、ラーメン本を買うのは多分私のようなラーメン・フリークである。だったら、もっとトンコツの下処理とか、各部位の呼び名とか、麺の切り場番号とか、コンブの等級とか、塩の種類とかフリークネタをとりあげてほしかった。
　グルタミン酸とイノシン酸の記述については、間違いも随所に見られる。カツオ節、サバ節、ソウダ節による味の違いや値段の違いなんか書かれたら、絶対しびれたのになあ。全然そういうことに触れず、ターゲットを見失った残念本でした。

　非常に出来の悪いラーメン本。
　全体のコンセプトとしては、ラーメンという食文化を多様な側面から分析してみること。しかし、個々の情報の精度が低く、信頼できない部分が多い。マニアックに突っ込んでいる部分もなく、引き写しやいい加減な推測が目立つ。自分の足で情報を収集した、ラーメン店をめぐって美味しさの秘密を発見したという気概が、まったく見られないのである。ちなみに、タイトルの「なるとの謎、シナチクの神秘」というのも、まったく解き明かされることなく終わる。
　1997年の出版ということで、仕方ないのかも知れないが、読むに耐えない。
　調理道具、どんぶり、ラーメン店の看板などをカラーで紹介している部分は良い。
　京都に住む人間から言わせてもらえば、本書の京都ラーメンに関する説明は、間違っている。
