かつて「陸の孤島」と呼ばれていた山形県庄内地方は、いまや「天国」とも思える魅力あふれる食の大地と進化しているらしい。そのきっかけが、ここ数年で予約の取れない店として全国的に有名になった、イタリアンレストラン「アル・ケッチァーノ」の奥田政行シェフ。てっきり、庄内の豊かな大地をそのまま活かして、ごく自然な流れでレストランを経営されているのかと思ったのだが、どうやらそうではなかったらしい。庄内で失われかけた在来作物を蘇らせ、徹底的に手をかける有機農法を普及させ、そして多くの人々が「庄内」を魅力的な大地とイメージできるようになるまでには、長い年月と奥田シェフの並大抵でない情熱が必要だったようだ。人材不足、賃金問題、そんな地方経済の負の部分を大きく抱えながらも、ひとりのシェフがもがき、葛藤しながら、前に進んでいく姿は、実に印象的だ。「食の安全」への関心が高まっている今現在でも、高い値段を出して有機野菜を手に取る人は、全体的に見ればまだごくわずかだという。そんな世の中で、「美味しくて体に良いものを」という思いで作物、食物を生み出す生産者と、「美味しくて体に良いものをできるだけ安く」と望む消費者の関係には、まだまだ課題も多いのだろうと思う。生産者と消費者を結ぶ一人のシェフの存在が、今の日本にとって「救い」だと思いたくなった。

テレビに奥田政行さんが出演されているのを見てこの本を読んでみた。
料理を口にしていても、それがどのような背景で作られてきたものなのか？など考えたこともなかった。
この本では奥田さんと省内の美しくも豊かな自然と、それを愛し守る人々の姿を知ることができる秀作。
経済発展の陰で在来作物が消えていく。
再生してもそれをニーズにいかに活かしていくのか？
庄内のモデルケースが他の地域でも同様に行くとは限らないが、大きなヒントを与えている。
心だけでなく知的にも満足させてくれる本。
