鶴田 静
エッセイスト・菜食文化研究家。東京都生まれ。明治大学文学部卒。1975年から77年のイギリス滞在中にベジタリアンとなる。帰国後エッセイを出版して文筆活動を開始。1982年の『ザ・ファーム ベジタリアン・クックブック』(野草社、絶版)を初めとし、ベジタリアンの思想と料理に関する本を多数執筆・翻訳する。現在、房総半島の農村に住み、ベジタリアニズムの基本をなす大地と接し、植物の愛好、野生動物の観察、ベジタリアン・クッキングにいそしみ、包括的なベジタリアン・ライフを提唱している(本データはこの書籍が刊行された当時に掲載されていたものです)

大学生時代に日々深刻化する環境問題に強い関心を抱き、そこからベジタリアンに興味を持ち始めました。
一番のきっかけとなったのは、牛肉を多用した某ファーストフード店や牛丼チェーン店の価格破壊競争でした。
動物の命を完全に無視した、資本主義剥き出しの容赦なき世界。

この本をきっかけに、更に食に対して考え直していこうという気持ちが強くなりました。
値段もお手頃で読みやすいし、歴史的文化的背景が理解できるので面白いです。
是非多くの人達に読んで貰いたいです。
こうした素晴らしい本によって、食に対するニーズが良い方向へ動いていくことを切に願います。

　この本は、読者に特定の思想を説得しようとする本ではなく、食べることと生きることについて、様々な角度から問題提起をしてくれる本です。食をめぐって、色々な時代、色々な地域での人間模様を紹介してくれます。

　私は食だけでなく、地球規模の視点から人間とはなにか、を考えさせられたような気がします。菜食に興味のない方でも、食べることとと生きること、を考えてみたい方にお薦めです。

日本で「私はベジタリアンです」と表明すると、おそらく、まわりは引くでしょう。また、安っぽいハリウッド映画を観ていると、たまにベジタリアンを皮肉ったジョークが出てきたりして、「彼らはやっぱ、アブ・ノーマルな人びとなのかなあ」と思ってしまいますね。そうした偏見を取り除くためにも必読です、この本は。ベジタリアンは、「菜食原理主義者」みたいなものではない、たまたま肉食をさける生き方に共感し、それを何気なく実行にうつしているだけなんだ、というオープンな視点がきっとえられます。ようするに「趣味は読書です」というのと同じようなものなんですよね。

それと、本書では歴史上の有名人たちが次々に登場し、しかも主にその日常生活にスポットライトがあてられているので、手軽な歴史のお勉強にもなります。なにかと、役に立つ本です。
