檀 一雄
1912年山梨県生まれ。幼年期を九州柳川で過ごす。東京大学経済学部卒。在学中の1933年、小説「此家の性格」を同人雑誌「新人」に発表。太宰治、坂口安吾らともに文学活動を始める。1937年、処女作品集『花筐』を出版。1944年に報道班員として中国戦線へ。同年、『天明』で野間文芸賞受賞。1950年『リツ子、その愛』『リツ子、その死』を出版。同年、『長恨歌』『真説石川五右衛門』で直木賞を受賞。1976年には『火宅の人』で読売文学賞受賞。同年、死去(本データはこの書籍が刊行された当時に掲載されていたものです)

タレントで食を愛する人がテレビや料理本に登場する。でも、料理はつくらず有名な料理店をあちこちまわってグルメと称している人も多い。私に言わせれば、彼らは野球をやったこともなく野球通と称している人に等しく、信用するに足りない。壇一雄のこの本はその対極にある。彼自身が日頃料理をつくることを愛し、また世界中を回って食を楽しんできた。この本では国籍を問わぬさまざまな料理のコツを惜しげもなく紹介している。ヒヤッ汁（ちる）、鶏の白蒸し、博多じめ、ザワーブラーテンなど、この本から学び、私のレパートリーになった料理は多い。あわせて、彼の手になる「美味放浪記」も必読の書である。

70~80年代の男たち、あるいは、男の子たちに、「料理とはすこぶる知的なものであり、延いては、料理の出来る男は格好良いのではないか。」という強烈な意識革命をしてくれたのは、この檀一雄の『檀流クッキング』と、曽野綾子の『太郎物語』の両作品ではないでしょうか。残念ながら、最近、男の料理に対してこれ程の影響力を持った作品が見当たりません。今また、読み返してみるべき価値のある作品ではないかと思います。この『檀流クッキング』には92種類の料理が紹介されていますが、細かな手順や分量などは大胆にもほとんど無視されています。この本は、細かな手順や分量だけをきちんと守れば間違いなくひとつの完成品が作れるというマニュアル本などではなく、押さえるところだけを押さえれば、後は自由自在にやってしまえばいい。そうすれば、ここで紹介されている92種類の料理（世界）が、200や、300の料理（世界）に膨らんでいくんだという事をとても楽しげに教えてくれる。そういう本だと思います。

　もともと昭和44-46年にかけて、産経新聞に連載されたコラム。その全94回分を1975年に文庫にまとめたのが本書。ただし、写真が割愛されている。
　料理書の古典的名著とされる一冊。日本と世界の各地で食べ歩いた料理を紹介するものだが、並の料理本とは違う。まず、著者の人間性が伝わってくる。また、料理はこうあるべしという思想がある。それも、高尚だったり難解だったりするものではなく、簡単で安いのに無視されがちな食材を使おうとするものなのである。そのため、内臓の料理が多く取り上げられている。また、鮭の氷頭なども。それらを通して、料理というのは「美味しく食べるための娯楽なんだ」ということを教えてくれる。
　親しみの持てる料理書だった。
