アマゾンのレビューをみて購入しました。
799ページもある大型書です。
ノンノと迷ったのですが、こちらの方が発行が遅かったので
しばらく廃刊にならず　いざというとき買い直せると思いこちらにしました。
2001年第１刷発行　2008年第２刷発行です。
料理の基本書を一冊欲しかったのですが、最近は書店に行っても
薄型のお洒落な料理本しかなく困っていました。
この本は基本書としてもさながら
事典としても使えます。
本当に細かいことまで載っています。
献立や栄養についても学べるので　絶対買いの一冊です。
なかなか書店に置いていないので、いきなり買うのは躊躇されると思いますが
是非騙されたつもりで購入されることをおススメします。
絶対後悔はしないはずです。

これ一冊あれば，さしあたって他の料理本を買う必要はありません。ボリュームがある分値段は張りますが，買って損はしません。毎日食べても飽きないおふくろの味が満載です。簡単に作れてしかも美味しいレシピのお陰で私は食事の献立を考えるのが楽になりました。レシピの提供者も城戸崎愛さん，石原洋子さん，藤野嘉子さん，栗原はるみさんetc..と大変豪華な顔ぶれです。

　自分は、専門学校卒ではなく、実務経験で調理師の受験資格を取った人間なので、ところどころ我流なところがある。

　だから、こういった基本書が必要だ。
大変わかりやすく、全てではないが、ほぼ料理の基本がカバーできる。

　調理師としてはや５年。今一度、読み込んで勉強しなおすことにする。
　
　ちょっと重たいので職場には持っていけないが、日常的に使いたい。
