禁句とも言われる屠場、そして差別され卑しい目で見られる屠場
でも、もし誇り高い彼らがいなければ私たちの食卓には
「おいしい肉」は並ばないと言うこと…

私は以前に屠場を見学したことがあるので
そういった類の偏見は持ってはいません。
しかし、いまだなお特に西のほうで卑しい偏見の目があることは
恥ずべきことだと思います。

内容も食卓に並ぶ前の工程もきちんと記録されていますし、
現場の人の声も取り入れているのでとてもよいです。

｢屠場｣は、いわゆる放送禁止用語の類に入る言葉です。マスコミでは｢食肉解体場｣などとごまかした言葉に置き換わります。その理由は、屠場が被差別部落の歴史と深いつながりがあるからなのですが、世間一般の感覚では、そのこと自体になんの疑問を持たないのが普通でしょう。

それは、屠場を紹介した本は少なく、また食肉工場というものも、表世界には登場することが少ないからです。鎌田氏はその｢裏｣世界をルポの対象に取り上げました。

私は、きっと鎌田氏のことだから、被差別部落との関連を中心に置いた重苦しいルポなのだろう、と思って読み始めました。ところが、むしろルポの中心になっているのは差別問題よりも、食肉解体という｢産業｣、そしてその周辺に成り立っている食肉の｢文化｣、ここで働く職人たちの｢労働問題｣などでした。

意外な印象でしたが、実は差別問題のルポを期待した時点で、私自身の中に｢差別の精神｣が存在していることに気付かされました。

この本を読むまで食肉の屠場について考えたこともなかった。
何気なく読んだこの本で私は屠場にとても興味を持ち出した
何年も前に読んだ本なのに、今だこの本に書かれていることは、私の心に焼き付いている
食肉を消費する人なら誰しも知らなければいけないことなのにと
実感させられ、また屠場で誇りを持って働いている人たちに魅了された
