　著者は京大などで中国文学を研究した人物。京都では伝説的な文化人として、いまも知られている。
　本書は元々1949年に弘文堂から出たもの。料理や食についての本である。論文調の文章から、行きつけの店を紹介した軽いエッセイまで、12編が収められている。
　内容はかなり雑多。中国における粉食文化を古代からたどったもの、京都のタケノコの味、うどんの歴史、落雁の起源、中国の漬け物についてなど。基本的には文献の渉猟により、歴史を明らかにするというもので、じっくりと読み応えがある。ただ、人によっては読みにくいと思うかも知れない。
戦前は長く中国に滞在しており、現地での体験も挟み込まれる。特に漬け物と酒の話で体験談が開陳され、面白かった。
　学問としては、いまでは書き替えられてしまっている部分が少なくない。研究スタイルとしても、読んでいてハラハラさせられる部分が多い。一昔前の学問世界をのぞき込む思いだ。
