ミシュランの匿名調査員は１日２食をレストランで摂り、毎晩違うホテルに泊まりながら、調査旅行を続けると言います。そして、星つきのレストランは１年の間に複数回、調査員が訪問するそうです。これを百年続けてきた成果が今のミシュランガイドです。２００３年は、アラン・デュカスのモナコの店、「ルイ・カアンズ」がとうとう３ツ星に復帰。さらにパリ８区の「ル・サンク」が３ツ星に仲間入りしたそうです。ガイドとしてでだけでなく、フランスの美食の奥深さを知る上でなくてはならない本です。

毎年買うのですが、２００２年版は、星の数ごとにまとめたページが加わってわかりやすくなっています。フランスの料理とホテルのガイドとしては、一番信用ができます。

フランス旅行に行くのに持って行きました。星付きのレストランを探すにはやはりこれが一番良いと思います。雑誌なんかに載っている「このレストランが3つ星」という情報などは何年に獲得されたもので、今日まで維持されているか分からないからです。
ちなみにこれはあくまでRed Guideなので、レストランの細かい位置を調べるのには不向きです。ロードマップは現地で買うかなんとかしましょう。この本にも電話番号が付いているから電話すれば良い話ではありますが、、、。星付きレストランには必ずと言って良い程、英語での対応が可能なスタッフもいますし。
