私はまったくの素人で趣味で作ってます。
辻口さんのレシピは大好きでほとんどの本を持っています。
この本は誤記が多いです。
しかもレシピの分量。
ソニーマガジンズのホームページを見なかったらきっと私は分量の誤記に気づかなかったでしょう。

お米でケーキができるなんて初めは信じられなかったのですが、リファリーヌを使用してびっくり、シホンケーキを焼いて、私の3人の友人に配って食べてもらったところ、全員からどこでこのケーキが買えるのかきかれました。また、真剣にパテシェになるようすすめられました。以前からお米でケーキができると聞いて市販のいろいろなメーカーの上新粉で何度か試しましたが、粘りが強くどれも失敗してしまいました。今回も、だまされたと思ってやってみたところ、これは本物だと実感しました。普通の上新粉とは全く違います。まだ試されていない人は、この魔法の粉リファリーヌを使ってケーキを焼くことをぜひお勧めします。

小麦粉でも、製菓店で新鮮かつ上質のものを使ってお菓子やパンを作ると、これは本当に自分（素人）がつくったのだろうかと思えるほど出来のよいものになります。私はまだリ・ファリーヌを使ったことがないので比較できませんが、米粉でも同様なのだろうな、と思います。

辻口氏は日本人である原点を保持しつつ、世界に通用するものを常に模索、挑戦している稀な「アーティザン（職人）」だと感じています。でも本書のレシピは専門家ぶった書き方ではなく、写真も豊富ですから、とても親しみやすいです。

「ケーキは人を幸せにする夢、ケーキで豊かな感受性を育んでほしい」と辻口さんは言っています。本書はレシピ本としてだけではなく、他の意味においても得難い一冊だと思います。
