本書の内容が充実していることについては、他の方がレビューに書かれている通りですので、すこし違った観点から書いてみようと思います。

本書は、生地を手捏ねで作ることを想定して書かれています。しかし、この本の生地作成のレシピは、パン生地を捏ねられるフードプロセッサー（クイジナート等）にそのまま応用できます。様々なレシピの基礎となっている「花巻の生地」等の作成を機械化すれば、成形等の”楽しい部分”をこなすだけで、本格的で美味しい料理ができあがります。手ごねの味には多少劣るかも知れませんが、大幅な時間・労力短縮は魅力です。

というわけで、「フードプロセッサーを持ってるけど、なかなかいいレシピ集が無いなあ」と思ってらっしゃる方にも非常にお勧めです。

あまりにも評価が高く、中華＆飲茶が三度の食事より大好きなわたしは
自分もそういうの、作って食べたい！と購入してみました。
結論から言うと、そうそう甘くはありませんでした。
５つ星はつけたけど、決して誰にでもお勧めということはできません。
とくに作るのより食べるほうが断然好きな人は、
どんなに詳しく書いてあっても無理なものは無理かも。
でも、揚げワンタンは、皮製作は失敗したけど、餡は本当に美味しいので、
次は皮だけ買って来ようとか、ジャージャーめんやタンタン麺もうどんで作ってみようとか、
そういう使い方ができるので決して買って失敗ではないです。
ただ、ほかの方の意見を見て「誰にでもできる！」と思い込むのにはちょっと注意（＾＾；）

私は台湾に住んでいるので、どれも馴染みのあるものばかり載っていました。馴染みのあるものでも作り方は知らなかったんですが、こんなに簡単なのかと驚きました。材料費も安いので、本当にお勧めです。だって、小麦粉と水だけで色んなものに変身するのですから･･･。
お店で売っているのと同じぐらいおいしい物が出来上がりました。
とくに、ツォンヨウピン（葱油餅）（カタカナのスペルに自信ない･･･)と花巻は簡単でおいしく、お薦めです。ぜひ試してみてください。
